Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp active dry yeast
  • 1 cup warm milk (about 110°F)
  • 2 cups mixed dried fruit (raisins, sultanas, currants)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1 tsp salt

Instructions

  1. Activate the yeast by combining warm milk, yeast, and 1 tsp sugar in a small bowl; let it sit until frothy.
  2. In a large bowl, mix flour, remaining sugar, salt, cinnamon, and nutmeg. Make a well in the center and add the yeast mixture, melted butter, and eggs.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Fold in soaked dried fruits until evenly distributed.
  5. Place dough in a greased bowl and cover; let rise in a warm area until doubled (1-2 hours).
  6. Preheat oven to 350°F (175°C). Punch down dough and shape it into a round loaf; place on parchment-lined baking sheet.
  7. Bake for 30-35 minutes or until golden brown and hollow-sounding when tapped.
