  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup whole milk (or milk alternative)
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp milk (for glaze)
  • 4 oz cream cheese (optional for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, baking powder, sugar, salt, and cinnamon until well combined.
  3. In another bowl, whisk together milk, melted butter, eggs, and vanilla extract until smooth. Combine with dry ingredients and stir gently until just mixed.
  4. For the filling, mix brown sugar and cinnamon in a small bowl.
  5. Fill muffin cups halfway with batter, sprinkle with cinnamon filling, then top with remaining batter.
  6. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  7. While cooling, prepare the glaze by mixing powdered sugar and milk (and cream cheese if desired).
