  • 1 cup bell peppers (sliced, mixed colors)
  • 1 cup carrots (shredded)
  • 2 green onions (sliced thinly)
  • 2 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp fresh lime juice

Instructions

  1. Soak the glass noodles in hot water for about 10 minutes until softened. Drain and set aside.

  3. Add sliced bell peppers and shredded carrots; cook until tender-crisp.
