- 1 cup granulated sugar
- 3/4 cup unsulfured molasses
- For the Filling:
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, ginger, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat the softened butter and sugar until fluffy. Mix in molasses until combined.
- Gradually add the dry ingredients to the wet mixture until well incorporated.
- Drop spoonfuls of dough onto prepared sheets about two inches apart and bake for 10 minutes until slightly puffy.
- While cooling, beat together cream cheese, powdered sugar, and vanilla for the filling.
- Once cookies are completely cool, spread or pipe filling onto one cookie half and top with another.
