  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3/4 cup unsulfured molasses
  • For the Filling:
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter and sugar until fluffy. Mix in molasses until combined.
  4. Gradually add the dry ingredients to the wet mixture until well incorporated.
  5. Drop spoonfuls of dough onto prepared sheets about two inches apart and bake for 10 minutes until slightly puffy.
  6. While cooling, beat together cream cheese, powdered sugar, and vanilla for the filling.
  7. Once cookies are completely cool, spread or pipe filling onto one cookie half and top with another.
