- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup diced bell peppers (mixed red and yellow)
- 3 cloves garlic (minced)
- 2 tbsp Cajun seasoning
- 1/2 cup freshly grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium heat and add olive oil.
- Season chicken breasts with Cajun seasoning and cook in the skillet for about 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
- Cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- In the same skillet, sauté diced bell peppers and minced garlic for about 3-4 minutes until tender.
- Pour in heavy cream and chicken broth, stirring well; let simmer for about 5 minutes until slightly thickened.
- Add cooked pasta and sliced chicken back into the skillet, tossing to combine. Stir in Parmesan cheese until melted.
- Serve hot with extra Parmesan on top if desired.
