  • 1 cup superfine granulated sugar
  • 2 teaspoons high-quality matcha powder
  • 4 ounces good quality white chocolate, melted
  • 1 cup heavy cream, cold
  • 1 cup fresh berries (assorted)

Instructions

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, whip egg whites until foamy. Gradually add sugar, beating until glossy stiff peaks form (about 5-7 minutes).
  3. Gently fold in the sifted matcha powder.
  4. Spoon or pipe the meringue into a circle on the prepared baking sheet, creating peaks for an elegant finish.
  5. Bake for about 1 hour and 15 minutes until crisp outside but soft inside. Turn off the oven and let it cool inside to prevent cracking.
  6. While cooling, whip heavy cream to soft peaks and fold in melted white chocolate. Once pavlova is cool, generously spread the whipped mixture on top and garnish with fresh berries.
