  • 1 cup Guinness stout
  • 1 medium sweet onion, diced
  • 1 cup carrots, diced
  • 2 sheets frozen puff pastry (thawed)

  • 1 tsp dried thyme
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until translucent.
  2. Stir in diced carrots, then add ground beef. Cook until browned.
  3. Mix in minced garlic, thyme, salt, pepper, and pour in Guinness. Simmer until thickened.
  4. Allow filling to cool slightly before assembling.
  5. Roll out puff pastry on a floured surface, cut into squares, fill with the cooled mixture, and fold diagonally.
  6. Seal edges with a fork and brush tops with beaten egg.
  7. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes or until golden brown.
