  • 1 (5 lb) Prime Rib Roast
  • 3 tablespoons Fresh Rosemary, chopped
  • 6 Garlic Cloves, minced
  • 3 tablespoons Olive Oil
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Freshly Cracked Black Pepper
  • 1 cup Beef Broth
  • 2 tablespoons Dijon Mustard

Instructions

  1. Take the prime rib out of the fridge 30 minutes before cooking to reach room temperature. Pat dry with paper towels.
  2. In a bowl, mix garlic, rosemary, olive oil, salt, pepper, and Dijon mustard. Rub this mixture generously over the prime rib.
  3. Preheat oven to 450°F (230°C). Place roast on a rack in a roasting pan. Roast for 20 minutes.
  4. Reduce temperature to 325°F (160°C) and cook for about 1.5 to 2 hours until it reaches an internal temperature of 130°F (54°C) for medium-rare.
  5. Remove from oven and let the roast rest for at least 20 minutes before slicing.
