- 1 (5 lb) Prime Rib Roast
- 3 tablespoons Fresh Rosemary, chopped
- 6 Garlic Cloves, minced
- 3 tablespoons Olive Oil
- 2 teaspoons Kosher Salt
- 1 teaspoon Freshly Cracked Black Pepper
- 1 cup Beef Broth
- 2 tablespoons Dijon Mustard
Instructions
- Take the prime rib out of the fridge 30 minutes before cooking to reach room temperature. Pat dry with paper towels.
- In a bowl, mix garlic, rosemary, olive oil, salt, pepper, and Dijon mustard. Rub this mixture generously over the prime rib.
- Preheat oven to 450°F (230°C). Place roast on a rack in a roasting pan. Roast for 20 minutes.
- Reduce temperature to 325°F (160°C) and cook for about 1.5 to 2 hours until it reaches an internal temperature of 130°F (54°C) for medium-rare.
- Remove from oven and let the roast rest for at least 20 minutes before slicing.
