  • 1 cup bell peppers (diced)

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine rinsed quinoa with 2 cups water or vegetable broth. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. In a skillet over medium-high heat, add sesame oil and sauté diced bell peppers and shredded carrots for about 3-5 minutes until softened.
  3. Stir in cooked quinoa, sweet chili sauce, and soy sauce into the veggie mixture; cook for an additional 2-3 minutes.
  4. Assemble bowls by layering the quinoa-veggie mix at the bottom, then topping with diced cucumber and chopped green onions. Sprinkle sesame seeds on top if desired.
