Description

Thai Chicken Salad is a fresh and vibrant dish featuring tender chicken and colorful vegetables tossed in a zesty lime dressing. Perfect for a healthy lunch or light dinner!

Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 2 cups chopped fresh cabbage (green and/or purple)
  • 1 cup grated carrots
  • 1/2 cup chopped cilantro
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • juice of 2 limes
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 minced garlic cloves
  • chili flakes to taste

Instructions

  1. Cook the Chicken: Boil or grill the chicken for about 10-15 minutes until fully cooked. Let it rest before slicing into thin strips.
  2. Prepare the Vegetables: Wash and chop the cabbage, carrots, bell pepper, cilantro, and green onions into bite-sized pieces.
  3. Mix the Dressing: In a bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chili flakes until well combined.
  4. Toss Everything Together: In a large mixing bowl, combine sliced chicken with chopped vegetables. Gradually pour in the dressing while gently tossing to coat all ingredients evenly.
  5. Serve Immediately: Transfer to a serving platter or individual bowls. Garnish with extra cilantro if desired.
