- 4 nori sheets

Instructions
- Prepare the Rice: Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes), then mix in rice vinegar and let cool.
- Slice the Cucumbers: Cut cucumbers lengthwise into thin strips.
- Assemble: Place a nori sheet shiny side down on a bamboo mat. Spread half a cup of cooled sushi rice evenly across the nori, leaving an inch free at the top.
- Add Fillings: Layer cucumber strips, julienned carrot, and avocado in the center of the rice.
- Roll: Lift the edge of the bamboo mat closest to you and roll away from yourself, sealing with water at the end.
- Slice & Serve: Cut rolls into bite-sized pieces using a wet knife and sprinkle with sesame seeds.
