Description

Lucky Hoppin’ John Empanadas combine the rich flavors of Southern black-eyed peas with fragrant spices, all encased in a flaky pastry. Perfect for any occasion, these delightful bites promise an explosion of flavor that will leave everyone wanting more.


Ingredients

  • 1 cup black-eyed peas (cooked)
  • 1 cup cooked rice
  • 1 small onion (finely chopped)
  • 1 bell pepper (chopped)
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 package of empanada dough (about 10 circles)
  • 1 egg (for egg wash)

Instructions

  1. Sauté onion and bell pepper in oil over medium heat until softened (about 5 minutes).
  2. Stir in cumin and paprika, followed by black-eyed peas and cooked rice. Mix well until heated through.
  3. Cool the filling slightly before assembling.
  4. Roll out empanada dough to about 1/8 inch thick and cut into circles.
  5. Place a spoonful of filling on one half of each circle, fold, and crimp edges to seal.
  6. Preheat oven to 400°F (200°C). Brush empanadas with egg wash.
  7. Bake for 20-25 minutes or until golden brown.
