- 1 cup black-eyed peas (cooked)
- 1 cup cooked rice
- 1 small onion (finely chopped)
- 1 bell pepper (chopped)
- 2 tsp cumin
- 2 tsp paprika
- 1 package of empanada dough (about 10 circles)
- 1 egg (for egg wash)
Instructions
- Sauté onion and bell pepper in oil over medium heat until softened (about 5 minutes).
- Stir in cumin and paprika, followed by black-eyed peas and cooked rice. Mix well until heated through.
- Cool the filling slightly before assembling.
- Roll out empanada dough to about 1/8 inch thick and cut into circles.
- Place a spoonful of filling on one half of each circle, fold, and crimp edges to seal.
- Preheat oven to 400°F (200°C). Brush empanadas with egg wash.
- Bake for 20-25 minutes or until golden brown.
