Ingredients
  

For the Base
  • 2 medium yellow squash sliced into rounds
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt
For the Topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Method
 

Prepare the Squash
  1. Preheat your oven to 400°F (200°C).
  2. Slice the yellow squash into rounds, about 1/4 inch thick.
Season the Squash
  1. Place the squash rounds on a baking sheet lined with parchment paper.
  2. Drizzle the olive oil over the squash and sprinkle with salt.
  3. Toss gently to ensure all rounds are coated.
Add Toppings
  1. In a bowl, combine the mozzarella, Parmesan, oregano, and black pepper.
  2. Spoon the cheese mixture generously over each squash round.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
