Ingredients
  

For the Salmon
  • 1 pound salmon fillet skinless
  • 2 tablespoons honey
  • 1 tablespoon chipotle powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Pineapple Salsa
  • 1 cup fresh pineapple diced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped
  • 1/2 teaspoon salt
For Serving
  • 8 small corn tortillas

Method
 

Prepare the Salmon
  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a small bowl, mix the honey, chipotle powder, salt, and black pepper.
  3. Brush the salmon fillet with the chipotle honey mixture evenly on both sides.
  4. Place the salmon on the grill and cook for about 4-5 minutes on each side, until cooked through.
Make the Pineapple Salsa
  1. In a medium bowl, combine the diced pineapple, red onion, cilantro, lime juice, and salt.
  2. Mix well and set aside to let the flavors meld.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Once the salmon is cooked, flake it into large pieces.
  3. Place a generous amount of salmon on each tortilla.
  4. Top with pineapple salsa and sliced avocado.
Serve
