This decadent cheesecake is inspired by the beloved Cookie Monster character, featuring a creamy blue cheesecake base and a delightful cookie topping.

Ingredients
  

For the Base
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 2 packages cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup blue food coloring adjust to desired color
For the Topping
  • 1 cup mini chocolate chip cookies
  • 1 cup whipped cream for garnish
  • 1/4 cup blue sprinkles for decoration

Method
 

Prepare the Crust
  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake the crust in the preheated oven for 10 minutes, then remove and let cool.
Make the Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add granulated sugar and vanilla extract, mixing until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the blue food coloring until the desired color is achieved.
Bake the Cheesecake
  1. Pour the cheesecake filling over the cooled crust in the springform pan.
  2. Bake in the oven for 50 minutes, or until the center is set but slightly wobbly.
  3. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
Chill the Cheesecake
  1. Remove the cheesecake from the oven and cool to room temperature.
  2. Cover and refrigerate for at least 4 hours or overnight before serving.
Prepare the Topping
  1. Before serving, top the cheesecake with whipped cream, mini chocolate chip cookies, and blue sprinkles.

Notes
