Ingredients
  

For the Base
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup spinach fresh, chopped
  • 1 cup bell pepper diced
  • 1 cup cheddar cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1/4 cup green onions sliced

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. In a large bowl, whisk together the cottage cheese and eggs until well combined.
  3. Add the chopped spinach, diced bell pepper, shredded cheddar cheese, salt, and black pepper to the egg mixture. Stir until fully mixed.
  4. Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
  5. Sprinkle the sliced green onions on top of each egg bite.
  6. Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden on top.
  7. Remove from the oven and let cool for a few minutes before gently removing them from the muffin tin.
  8. Serve warm or store in an airtight container in the refrigerator for up to 5 days.
