- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray.
- In a large bowl, whisk together the cottage cheese and eggs until well combined.
- Add the chopped spinach, diced bell pepper, shredded cheddar cheese, salt, and black pepper to the egg mixture. Stir until fully mixed.
- Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
- Sprinkle the sliced green onions on top of each egg bite.
- Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before gently removing them from the muffin tin.
- Serve warm or store in an airtight container in the refrigerator for up to 5 days.
