Prepare the Salmon Cake Mixture
- In a large mixing bowl, combine the drained and flaked canned salmon, breadcrumbs, egg, Dijon mustard, parsley, garlic powder, onion powder, salt, and pepper. Mix until fully combined.
- Shape the mixture into patties, about 1/2 inch thick. You should yield approximately 8 patties.
Cook the Salmon Cakes
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, carefully add the salmon patties to the skillet, making sure not to overcrowd the pan.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy.
Serve
- Once cooked, transfer the salmon cakes to a plate lined with paper towels to absorb excess oil.
- Serve warm with lemon wedges on the side for squeezing over the cakes.
